
While we were relocating our babies (chicks), Bailee and Emilee, Dan's daughters, were on the tree swing "scateboarding". Well, that's what Emilee called it!
So, you saw the picture of our new bunny Pistacio. We thought we needed another male for diversity. We put him in with LuLu and they proceed to fight and get very mean with each other. Paul told me I'd better check and see for sure if LuLu was indeed a LuLu!! We had taken the word of the lady, who by the way, raises them and sells them, that LuLu was a female.
Welllllllllllll, Luigi (or Louie), formally known as LULU, did not appreciate being molested by Pistacio!!!!!! Next time, I WILL CHECK OUT if it's a male or female!!

--Cheese Danish--
16 ozs. cream cheese, softened
1-1/2 teaspoons vanilla1 egg, beaten
1/2 cup sugar
1/2 cup raspberry or apricot jam
2 packages of refrigerated crescent roll dough
4 ozs. sliced almonds
Preheat oven to 350F. Mix cream cheese, vanilla, and sugar in a bowl. Unroll 1 can crescent roll dough on a cookie sheet, sealing perforations. Spreadcream cheese filling on dough, leaving 1/4 inch edges. Top with jam. Unroll second can of dough and lay on top of first layer. Seal edges with edge of fork. Brush with beaten egg. Sprinkle with sliced almonds. Bake for 30minutes. Allow to cool slightly before cutting.
--Cheesecake Factory Bruschetta--
1-1/2 cups chopped roma tomatoes
2 Tbsp.diced red onion
1 large clove garlic, minced
2 Tbsp. chopped fresh basil
2 tbsp. olive oil
1/2 tsp. red wine vinegar
1/4 tsp. salt
dash of ground black pepper
1/2 loaf french baguette or ctusty italian bread, sliced into 5-7 slices
1/4 tsp. garlic salt
2-3 sprigs italian parsley
In a medium bowl, combine tomatoes, onion, garlic and basil. Add 1/2 Tbsp.of oil, vinegar, salt and pepper and mix well. Cover bowl and refrigeratefor at least an hour. Preheat broiler, slice the bread in 1" slicesdiagonally to make 5-7 slices. Combine remaining 1 1/2 Tbsp. oil with thegarlic salt. Brush entire surface of each slice (both sides) with the oliveoil mixture. Broil slices for 1 1/2-2 mins. on each side, until surfacestarts to brown. Arrange bread like spokes of a wheel on plate. Put thechilled tomato mixture in a pile in the middle of the slices. Garnish withitalian parsley.
--Cheesecake Factory Pumpkin Cheesecake--
Crust:
1-1/2 cups graham crumbs
5 Tbsp. butter, melted
1 Tbsp. sugar
Filling:
3 - 8oz. pkgs. cream cheese, softened
1 cup sugar
1 tsp. vanilla
1 cup canned pumpkin
3 eggs
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
Whipped Cream
Mix crust ingredients together, just till coated and crumbly. Press onto thebottom and 2/3 up the sides of an 8" springform pan. Bake for 5 mins. at350. Set aside. Combine cheese, sugar and vanilla in large bowl, mix untilsmooth with an electric mixer. add pumpkin eggs,and spices, beat till smoothand creamy. Pour into the crust. Bake for 60-70 mins.or till the top turns abit darker. Remove from oven and allow to come to room temperature, then refrigerate. After it has thoroughly chilled, remove the pan sides and cut. Serve with whipped cream.
