OH DEER!!






Ok, you know kids! Always leaving the door open, letting in every bug in the county, letting the hot air into the airconditioned room, letting the cold snow come into a nice warm room, the list goes on and on! Here's a new one.
"Dad", 6 year old Madison says. "There is a deer messing with your truck"
"In or out, shut the door!" Dad says. "Dad, there is a deer messing with your truck" "In or out, shut the door!!" "DAD!!!" "What???"
"There is a deer messing with your truck" "Madison, Shut the door!" "But Dad, there is a deer messing with your truck!!!"
The children ended up following the deer around the neighborhood, feeding it and taking lots of pictures of the tame deer.

Our Smiling Grandson!!






The "Cheesin" sweety is 7 week old Colton. He is smiling at his Daddy, while Mommy (My oldest baby, Christina) takes the pictures. It took quite a long time to get a smiling picture. He'd smile, they'd run for camera, he'd just look at them!!!

The top picture is his brother Cody. Christina has the oldest and youngest grandchild. Cody is sixteen. Cody claims Colton always smiles for him!!

Happy Birthday Ryssa!!!




I keep saying, "they grow up so fast", and can't say it enough!! Not too long ago, my girls were this age! Today Ryssa is 12 years old!! Happy birthday Ryssa!!!! LOVE YOU!
In the fall, she will be in Middle School!
--Church's Fried Chicken--
1 tablespoon sugar
1 1/2 cups self-rising flour
1/2 cup cornstarch
3 teaspoons seasoned salt
2 teaspoons paprika
1/2 teaspoon baking soda
1/2 cup biscuit mix
1 envelope Italian dressing mix
1 envelope onion soup mix
2 eggs mixed with 1/4 cup cold water
1 cup oil
Combine dry ingredients in a 4-cup container. Mix to blend theingredients thoroughly. Store tightly covered at room temperature up to3 months. To use, dip the chicken pieces in egg mixture and then intodry coating mix and back into egg to coat the pieces evenly but lightlyand finally back into dry mix. Have oil piping hot in heavy skillet.Brown pieces skin-side down for 4 to 6 minutes. Use medium high heat.Turn and brown underside of pieces a few minutes. Transfer to an oiledor Pam-sprayed 9x12x2 pan. Cover pan in foil, sealing it on only 3 sidesof pan. Bake at 350F for about 45 to 50 minutes. Remove foil. Bakeanother 5 minutes just to crisp the coating.
--County Line BBQ's Chuck Wagon Beans--
1 lb. dry Pinto Beans
1/2 cup finely Diced Onions
1 Tbls. of Salt1 tsp. of Pepper
1 Tbls. of Brown Sugar
2 tsp. of Chili Powder
1/2 tsp. of Garlic Powder
1/4 tsp. of Celery Salt
1/2 cup of Chopped Bacon
Cover beans with water. Bring to a boil and then turn off heat. Soak for onehour aand then drain. Add more water to cover beans and add all remainingingredients. Cook on low to medium heat (you'll want a low boil) for 2 to 3hours or until beans are done to desired tenderness.
--Chorizo--
1 lb. ground lean pork
1 teaspoon salt
2 Tablespoons chili powder
1/4 teaspoon cumin
1/2 teaspoon oregano
2 cloves garlic, pressed
2 Tablespoons vinegar
Mix all ingredients. Allow to sit overnight in the refrigerator.Form into patties as with other sausage, or crumble and fry.

More Babies Growing Fast!!



They are finally moving around! We have 4 new baby rabbits, born on Father's Day, June 21st! They are so cute and fit in the palm of your hand.
Their eyes are now open and they are venturing out of their nest to see the world. In another week, we will start holding them, to get them used to people.

Happy 4th of July!!

We hope you and yours had a healthy, SAFE weekend and a great 4th!!
This week, I hope to get some more pictures of our little bunnies. They are 2 weeks old today. I'm pretty sure there are 4 of them.
We put the month old chicks in the yard to get some bugs, and enjoy the outdoors!
We "thinned" out our older chickens. All in all, we had a very busy, fruitfull weekend.
Dan's girls, Bailee and Emilee were a great help to Nana and Grampa. Emilee helped catch the chicks. She did a great job puttin them back in their cages. They are still too small to put with the other chickens.

More New Critter Babies!

Ok, these little babies are only about 4 inches long. Can you tell what they are???? I'm pretty sure there are 5 of them!


Here are some copy cat recipes. They are great recipes!

--Cracker Jack--
4 Quarts Popped popcorn
1 Cup Spanish peanuts
4 Tablespoons Butter
1 Cup Brown sugar
1/2 Cup light Corn syrup
2 Tablespoons Molasses
1/4 Teaspoon Salt
Preheat oven to 250 degrees.Combine popcorn and peanuts in a metal bowl or on a cookie sheetand place in preheated oven. Combine all remaining ingredients in asaucepan. Stirring over medium heat, bring the mixture to a boil.Using a cooking thermometer, bring the mixture to the hard-ball stage(260-275 degrees). This will take about 20 to 25 minutes.Remove the popcorn and peanuts from the oven and, working very quickly,pour the caramel mixture in a fine stream over them.Then place them back in the oven for 15 minutes.Mix well every five minutes, so that all of the popcorn is coated.Cool and store in a covered container to preserve freshness


Eatmore Bars--
1 cup peanut butter
1 cup corn syrup
1/2 cup chocolate chips
1 cup brown sugar
3/4 cup peanuts
1/2 cup sesame seeds
1-1/2 cup rice krispies
1/2 cup sunflower seeds (raw, shelled)
Simmer peanut butter, corn syrup, chocolate chips, and brown sugar togetherfor 8-10 minutes. Mix in remaining ingredients. Press onto cookie sheet.Cool and cut into bars. Do NOT put in fridge as they'll become too hard.

Grandbabies Growing Up!!



Well, this kid's enthusiasm is just overwelming!!! Cody turned 16 today! He is the oldest grandchild. His mother has the oldest and the youngest grandchild. Four weeks ago, Christina had the youngest grandbaby, Colton.
The top picture is Cody (eyes covered) and his cousins, Matthew and Trevor. Doesn't seem that long ago the top pic was taken. How time flies!!

More Chicks!!









WOW!!! This was the greatest thing to watch!! We get a new Grandbaby, and then a day later we get to watch chicks hatch!!!! We're still waiting to see is the rest will hatch, but out of a dozen eggs we got 7 little chicks so far! This would be a super science project for any of the grandkids.
Here are some new copy cat recipes:

Chili's Steak Fajitas--
Mix together in a bowl:
1 cup soy sauce
1/4 cup honey
1 tablespoon Worcestershire sauce
1 teaspoons minced garlic
1 teaspoon ground ginger
1 cup water
In an appropriate size dish, place
2 lb. sirloin or flank steak Pour sauce (reserve 1/4 cup) over steak. Cover, and allow to marinate overnight. Drain meat and slice into thin strips. Heat skillet over medium high. Add drained meat and:
1 red bell pepper, cut in thin strips
1 green bell pepper, cut in thin strips
1 onion, thinly sliced
Stir-fry just until meat is done, adding reservedmarinade as needed to prevent sticking.Serve with warmed flour tortillas.
--Chinese Sesame Chicken--
2 Chicken Breast, skinless & boned pieces about
6-8 oz.5 tablespoons corn starch
Pinch of salt
6 tablespoons water
1/2 teaspoon minced ginger
1/2 teaspoon chopped fresh garlic
1 teaspoon chili oil depending on degree of spicy of your taste
1/2 teaspoon roasted sesame seeds
Salad oil for deep fryIceberg lettuce
Sauce:
8 tablespoons Chicken broth
1 tablespoon Dark soy sauce
2 tablespoons Soy sauce
4 tablespoons Sugar4 tablespoons
White vinegar1 teaspoon Corn starch
1 teaspoon Sake
1/2 teaspoon Oyster sauce
In a small bowl, mix all sauce ingredients until well blended. Cut chicken breast into ½ inch strips. Place in a bowl with water and salt and let soak for about 15 minutes. Do not drain. Add cornstarch and mixwell, coating chicken. Add 1 tablespoon salad oil to chicken and mix tosmooth and separate chicken strips.Heat wok with medium flame, pour in oil for deep frying. Heat oil up toabout 325 degrees. Place coated chicken strips in piece by piece and fry until it is crispy and cooked through. Remove chicken and pour off oil. Heat up wok again with an additional
1-teaspoon salad oil. Add ginger, garlic and chili oil stir frying until fragrant. Add sauce mix, stir untilthickens. Add fried chicken strips and mix well to coat all chicken stripswith sauce. Sprinkle on the sesame seeds before serving on a bed of lettuce.

ZOO!!!






We had a great day at the zoo!!! Along with the 3rd graders from Pinewood Elementary School, there were about 8 more bus loads of kids from all over Indiana and Michigan!! Mitch, (my son) went with his son, and I went with Julissa (Jennifer's daughter). The tiger came up to the glass to greet Alex and Julissa.
They were able to pet the tortoises and came nose to nose with the flamingos!!
The class was given 3-4 pages they were to fill out at the zoo, including carnivorous mammals, birds, etc.
When asked what the flamingos ate, Julissa promptly said, " Uhhhh, FINGERS!!!"
Again, we had a great day, ending with a late lunch and then headed home.

School Lunch!


Today, I went to lunch with Julissa (Jennifer's) and Alex (Mitch's). They are 3rd graders at Pinewood Elementary School. We ate in the Library. Nana (Paul's LOL) took cookies for dessert. We had a very nice time and enjoyed the lunch.
Here are some cool Applebee's copy cat recipes:
Applebee's Hot Artichoke and Spinach Dip
1(10 ounce) box frozen chopped spinac, thawed
1 (14 ounce) can artichoke hearts, drained and roughly chopped 1 cup shredded parmesan-Romano cheese blend 1/2 cup shredded mozzarella cheese 10 ounces prepared Alfredo sauce 1 teaspoon minced garlic 4 ounces softened cream cheeseHeat oven to 350 degrees F.Combine ingredients thoroughly in a bowl and spread mixture into a small baking dish. Bake for 30 minutes or until cheeses are bubbling and melted.Serve as the "sauce" for Applebee's Veggie Patch Pizza or as a dip for chips.

Applebee's Veggie Patch Pizza

1 (10-inch) flour tortillaButter-flavor oil, as needed 1/2 cup sliced mushroomsBlack pepper, to tasteGranulated garlic, to tasteSalt, to taste 4 ounces Hot Spinach and Artichoke Dip1/2 teaspoon Italian seasoning 1/4 cup diced tomatoes 1/2 cup shredded mozzarella cheese 1 tablespoon shredded Parmesan/Romano cheese

Band Concert!






We went to a Band Concert tonight for the 6th graders. This was Jennifer's Zach and Catherine's Ryssa. Zach plays the trumpet and Ryssa plays the French Horn. They did a wonderful job. While Catherine and I went to the concert, Jennifer took her girls Kalista and Breann to their school play.
Next week will be a busy week with school events. Monday is lunch with Julissa (Jennifer) at school, and in the afternoon with Trevor (Catherine's) for an awards assembly. Ryssa (Catherine's) will be taking a field trip to Chicago Monday also.
Another great event next week: Trevor is getting inducted into the National Honor Society!!!!!! Yeah Trevor! (Nana was also in the National Honor Society!!)
Thursday is Potawanami Zoo with Alex (Mitch's) and Jullisa (Jennifer's) for their field trip. Mitch and I are opting out of the school bus ride, and will follow in the car. That means more pictures next week with all these events.
Here are some more copy cat recipes that I can't wait to try.
--Double Tree Hotel Chocolate Chip Cookies--
2 cups flour
1/2 tsp. baking soda
1/4 tsp salt1 cup oats (uncooked)
3/4 cup sugar
3/4 cup Dark Brown sugar
1 cup butter, softened
2 large eggs
2 tsp. vanilla
1 tsp. lemon juice
12 oz. chocolate chips
1 1/2 cup walnuts
Preheat oven to 375 degrees. Lightly grease cookie sheets. Place the butter in a large bowl and cream lightly with anelectric mixer. Add the sugars and beat on medium speed for about 2 minutes. Add the eggs, one at a time, beating well after each addition. Add the vanilla and lemon juice and mixwell. In a separate bowl, stir together the flour, oatmeal,baking soda, and salt. Add to the creamed butter mixture and stir well to blend. Add chocolate chips and walnuts and stir to combine. Using a 1/4 cup measure or a 2-oz ice cream scoop, drop the batter on the cookie sheets, leaving 2 -3 inchesbetween each cookie.
Bake for 13 - 15 minutes or until lightlybrowned around the edges. Remove from the cookie sheets andcool on wire racks.
--Dunkin Doughnuts--
1 pkg. regular or quick-acting yeast
1/8 cup warm water (105-115 degrees)
3/4 cup lukewarm milk (scalded then cooled)
1/4 cup sugar
1/2 tsp. salt
1 egg
1/6 cup shortening
2 1/2 cups all-purpose flour
Dissolve yeast in warm water in mixing bowl. Add milk, sugar, salt, egg, shortening and 1 cup of flour. Beat on low speed while scraping bowl for30 seconds. Beat on medium speed, scraping bowl occasionally, 2 minutes Stir in remaining flour until smooth. Cover and let rise in warm placeuntil double, about 50-60 minutes. Turn dough onto floured surface. Roll dough 1/2- inch thick. Cut with round cookie cutter. Cover andl et rise on floured baking sheets until double, 30-40 minutes. Heat vegetable oil in deep fryer or Dutch oven to 350. Slide doughnuts into hot oil. Turn doughnuts as they turn golden brown, about one minute oneach side. Remove carefully from oil (do not prick surfaces) and drain. When cool, make small hole to insert vanilla frosting. Take a sharp knife and carefully make a large cavity inside of the doughnut to hold the frosting. Fill the doughnuts generously with vanilla frosting anddust heavily with powdered sugar.
Makes: 12 doughnuts
VANILLA FROSTING FOR FILLING:
1/4 cup solid vegetable shortening
1/4 cup butter or margarine
1/2 tsp. clear vanilla extract
2 cups sifted confectioners sugar1 tbsp. milk
Cream butter and shortening, gradually add sugar 1/2 cup at a time. Add milk and vanilla, beat until light and fluffy.

New Chicks

As you know, we were given older chickens, along with our baby chicks. To keep laying hens, you have to "refresh" the batch of chickens yearly. They were a bigger breed chickens than the chicks we bought. We decided to let one hen, who threw a fit everytime you took her egg, lay on her eggs and hatch them out. Well, that did not work too well.
After letting her accumulate a few, we went out and one was missing. The next time we went out, another hen was EATING the egg!! So much for letting them "refresh" by themselves. That's when we went and got an incubator. The picture above is the incubator with 12 eggs in it.
It takes 21 days for the eggs to grow into a chick. This is day eight. When they start hatching, around the 25th of May, we will take step by step pictures and invite anyone and everyone to come watch. The little kids should really enjoy this!! So plan on making a trip to Greenwood Acres to see the chicks hatch out!!!!!

Honor Roll Award!

Alex had an award assembly tonight for being on the honor roll all four grading periods. Congratulations Alex!! Meanwhile, Nana (me) was watching the other children at their home and 12 other neighbor kids!! All in all, they were all really good.


Here are some copy cat recipes from Cracker Barrel


--Cracker Barrel Cherry Chocolate Cobbler--
1-1/2 cups flour
1/2 cups sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cups butter
1 (6 oz.) pkg. Nestle's semi-sweet chocolate morsels
1/4 cups milk
1 egg
1 (21 oz.) can cherry pie filling
1/2 cups nuts, finely chopped
Preheat oven to 350F. In large bowl, combine flour, sugar, baking powder, salt and butter; cut with pastry blender until crumbs are size of large peas. Melt over hot (not boiling) water, Nestle's semi-sweet chocolate morsels. Remove from heat and cool slightly at room temperature (about 5 minutes). Add milk and egg to melted chocolate and mix well. Blend chocolate into flour mixture. Spread cherry pie filling in bottom of 2 quart casserole. Drop chocolate batter randomly over cherries. Sprinkle with chopped nuts. Bake at 350 F for 40 - 45 minutes. Serve warm with heavy cream.
--Cracker Barrel's Bread Pudding-
-Sugared Pecans: In small skillet combine 2 tablespoons butter and 1 tablespoon oil, med-low heat, with 2-oz pecan pieces. Stir only till heated and barely bubbly. Sprinkle with 4 tablespoons sugar. Stir briskly only till sugar dissolves, on low heat AS THESE BURN QUICKLY! Work fast. Dump them into paper towel lined plate. Spread out to cool while you prepare the rest.
Plumped Raisins: In small saucepan combine 1/3 cup raisins and 1 cup boiling water. Cover pan with lid 20 minutes. Drain and discard water. Add 1/2 cup packaged shredded coconut to raisins. Set aside.
Dumplings: In dutch oven combine 6 cups water and 1/2 cup sugar. Bring to boil. While you wait for that to boil, combine in medium bowl, 3 cups Bisquick, 1 cup milk, 1 tablespoon sugar, stirring with fork to moisten thick dough. When water come to boil, drop dough by rounded tablespoonfuli nto boiling water, making about 14 dumplings. Cover pan with lid. Simmer dumplings very gently 20 minutes. Uncover and let cook another 10 minutes gently. Baste often in the liquid, which is now becoming thickened and creamy looking. Remove pan from heat. With slotted spoon remove HALF of dumplings to greased 8" square baking dish. Sprinkle with pecans andraisins/coconut. Arrange rest of dumplings over that. Set aside.Make sauce next.
Caramel Sauce: Strain remaining liquid into heavy 2 1/2-quart sauce pan.Bring to boil. Stir constantly. Add 1 cup packed light brown sugar, stirring vigorously, med-heat till it boils briskly 2 or 3 minutes or till sugar is completely dissolved and sauce drops from spoon in large drops rather than like water. It should be the consistency of smooth gravy. Spoon sauce over dumplings filling dish right to the rim. Cool 15 minutes. Cover; refrigerate to serve within few days. Micro warm servings oruse cold with a scoop of ice cream on top of each. Serves 6 to 8.--

Cracker Barrel's Hashbrown Casserole--
2 lbs. frozen hashbrowns
1/2 cup melted butter
1 can cream of chicken soup
1 pt. sour cream
1/2 cup chopped onion
2 cups grated cheddar
1 tsp. salt
1/4 tsp. pepper
2 cups crushed cornflakes
1/4 cup melted butter
DEFROST hashbrowns. COMBINE next 7 ingr. and mix with hashbrowns. PUT all in a 3 qt. casserole. SAUTE cornflakes in butter and sprinkle on top. COVER and BAKE at 350 for about 40 min.

The top picture is of our turkeys when they were a day old. The two bottom pictures are the turkeys at 2 months old. They follow you around, talk to you and are just a good pet!! They sure do grow fast. In a month, I will put another picture on to show how much more they have grown.
--Chili's Grilled Caribbean Chicken Salad--
4 boneless, skinless chicken breast halves
1/2 cup teriyaki marinade (store bought)
4 cups chopped iceberg lettuce
4 cups chopped green leaf lettuce
1 cup chopped red cabbage5.5 oz. can pineapple chunks in juice, drained
tortilla chips
PICO DE GALLO:
2 med. tomatoes , diced
1/2 cup diced spanish onion
2 tsps. chopped fresh jalapeno pepper, seeded and de-ribbed
2 tsps. finely minced fresh cilantro
pinch of salt
Combine all ingredients in a small bowl. Cover and chill.
HONEY LIME DRESSING:
1/4 cup Grey Poupon dijon mustard
1/4 cup honey
1-1/2 Tbsps. sugar1 Tbsp. sesame oil
1-1/2 Tbsp. apple cider vinegar
1-1/2 tsps. lime juice
Blend all the ingredients in a small bowl with an electric mixer, Cover andchill. Marinate the chicken in the teriyaki for at least two hours.Use a resealableplastic bag. Put in fridge. Preheat outdoor or indoor grill. Grill thechicken for 4-5 mins. per side or until done. Toss the lettuces and cabbagetogether and divide into 2 large serving size salad bowls. Divide the picode gallo and pour in equal portions over the two bowls of greens. Divide thepineapple and sprinkle on salads. Break tortilla chips into large chunks andsprinkle on salads. Slice the grilled chicken into thin strips and divideamong bowls. Pour the dressing into two small bowls and serve with the salads.

Can You Say "Refrigerator Award"??




Amanda, our 11 year old New York grand daughter, got on the honor roll!! Great going Amanda!!!! So, Amanda is getting the refrigerator award!! The award was started when 8 year old Alex called to say he got on the refrigerator. Meaning, he was able to put his report card on the refrigerator!! This is a great honor in most of our homes. It's the place most looked at and mosted honored!! So, Amanda, watch the mail, the award is in the mail!!



Ok, here are some more copy cat recipes:
--Bread Bowls--
2 1/2 cups warm water (105-115 degrees Fahrenheit)
2 packages active dry yeast
1 Tbsp. salt
1 Tbsp. sugar
2 Tbsp.
oil
6 1/2 - 7 1/2 cups bread flour
1 egg, beaten
1 Tbsp. milk
Measure warm water into large bowl. Sprinkle in yeast; stir until dissolved.Add salt, sugar, oil and 3 cups flour; beat until smooth. Add enoughadditional flour to make a stiff dough. Turn out onto lightly floured board;knead until smooth and elastic, about 10 to 12 minutes. Place dough in bowlthat has been lightly coated with nonstick spray, turning to grease top.Cover; let rise in warm place until doubled, about 1 hour.Grease outside of 12, 10-ounce custard cups or oven-proof bowls of similarsize.Punch dough down; divide into 12 pieces. Cover and let rest 10 minutes.Spread each piece into a circle about 6 inches in diameter. Place overoutside of bowl, working dough with hands until it fits. Set bowls, doughside up, on baking sheet that has been coated with nonstick spray. Coverwith plastic wrap; let rise in warm place until doubled, about 30 minutes.Combine egg and milk; gently brush mixture on dough. Bake at 400 degreesFahrenheit for 15 minutes until golden brown. Using potholders, carefullyremove the bowls. Set bread bowls open side up on baking pan; bake 5minutes. Makes 12 servings.For larger bowls, use oven-proof bowls that are approximately 6 inches indiameter. Divide dough into 6 portions. Frozen bread dough also can be used. A 1-pound loaf will make 2 large or 4 small bowls.

-Bullseye BBQ Sauce-
1/2 Cup chopped onions
1 can tomatoe sauce - 8 oz.
1 Cup water
1 1/4 Cup ketchup
2 Teaspoon brown sugar
2 Teaspoon prepared yellow mustard
1 Teaspoon olive oil
1 Teaspoon worcestershire sauce
1 dash tobasco sauce
Combine ingredients, cover and simmer for 30 mins.

Yesterday, we made 3 new soap scents. We made
Sweet Pea, Shelley's Peachalicious , and Sweet Honeysuckle!
Sweet Pea is the sweet flowery scent of Sweet Peas, Shelley's peachalicious is the fresh scent of peaches picked straight from the tree, and Honeysuckle, the scent of honeysuckle sprigs!!
These soaps can all be put in closets, drawers, and every room in your house, to make them ohhhhh so sweet smelling!!

Here are some cool beer bread recipes you will love. We had some beer bread last week and loved it, so we decided to look up some recipes. Here is what we found!!

Beer Bread
There are a few recipes for Beer Bread out there, but none as simple (and tasty!) as this one. You can even mix it in the baking pan for easy clean up.

SERVES 6 -8
3 cups flour (sifted)
3 teaspoons baking powder (omit if using Self-Rising Flour)
1 teaspoon salt (omit if using Self-Rising Flour)
1/4 cup sugar
1 (12 ounce) can beer
1/2 cup melted butter (1/4 cup will do just fine)
Preheat oven to 375 degrees.
Mix dry ingredients and beer.
Pour into a greased loaf pan.
Pour melted butter over mixture.
Bake 1 hour, remove from pan and cool for at least 15 minutes.
UPDATED NOTES: Sifting flour for bread recipes is a must-do. Most people just scoop the 1 cup measure in the flour canister and level it off. That compacts the flour and will turn your bread into a "hard biscuit" as some have described. That's because they aren't sifting their flour! If you do not have a sifter, use a spoon to spoon the flour into the 1 cup measure. Try it once the "correct" way and you will see an amazing difference in the end product.
I have had many email from you kind folks about using non-alcoholic beverages instead of beer. That is fine to do but I highly recommend adding a packet of Dry Active Yeast or 2 teaspoons of Bread (Machine) Yeast so that you get a proper rise.
The final result should be a thick, hearty and very tasteful bread, NOT A BRICK! ;).

Basic Beer Bread Mix:
Ingredient
all-purpose flour 3 cups
granulated sugar 1 tbsp
salt 1 tsp
baking powder 1 tbsp
beer 1 1/2 cups
Optional glaze 1 egg & 2 tsp , beaten
Heat oven to 375F degrees. Combine flour, sugar, salt, and baking powder in a large mixing bowl. Slowly stir in beer and mix just until combined. Batter will be thick. Spread in a greased 8-inch loaf pan, brush with egg glaze if desired, and bake until golden brown and a toothpick stuck in the center comes out clean, about 45 minutes.Cool in the pan on a rack for 10 minutes. Remove from pan and cool 10 more minutes. Serve warm or at room temperature. Will keep for 1 to 2 days stored in a plastic bag or airtight container. May be frozen.

Flavor Variations:
Onion Rye or Un-Rye:
Heat 2 Tablespoons olive oil in a medium skillet. Add 1 cup finely chopped onion and 1 Tablespoon caraway seeds. Cook at medium heat, stirring frequently, until onion is translucent and beginning to brown, about 5 to 8 minutes. (This step may be done ahead of time; let onion mixture sit at room temperature up to two hours or refrigerate.)If desired, replace the 3 cups of all-purpose flour with 1-1/2 cups all-purpose flour, 1 cup rye flour and 1/2 cup whole wheat flour. Stir onion mixture into batter along with 2 more Tablespoons of beer or water.
Cheddar & Dill:
Add 2 Tablespoons chopped fresh dill and finely grated sharp cheddar cheese to the basic mix.
Garlic & Herb:
Add 1 teaspoon dried rosemary, 1 teaspoon dried oregano, 1 teaspoon dried thyme, and 2 minced garlic cloves (or 1 teaspoon garlic flakes) to the basic mix. For fresh herbs, use 1 chopped Tablespoon of each.
Dill & Chive: Add 2 Tablespoons fresh dill (or 2 teaspoons dried dill) and 1/4 cup chopped fresh chives to the basic mix.
Italian: Add 1 teaspoon each dried basil and oregano (or 1 Tablespoon each chopped fresh basil and oregano), 2 minced cloves of garlic, and 1/2 cup finely grated parmesan or romano cheese to the basic mix.
Other Additions: Any dried or fresh herbs; 1/2 cup freshly grated asiago (or other hard cheese); 1/2 cup chopped scallions; 1/2 cup chopped fresh parsley, 1/2 cup oats in place of 1/2 cup of the all-purpose flour; or practically anything else you can think of — use your imagination.

Happy Birthday Matt!!



Today Matt, Jennifer's oldest, is 15!! Wow, you really don't realize how fast time flies until you have children and grandchildren. HAPPY BIRTHDAY MATT!!!

Here are some recipes for you Matt! Matt loves to bake, and he's really good at it too.

Overnight Coffee Cake
Ingredients
16-18 frozen dinner rolls
1 box butterscotch pudding mix
1/2 C. brown sugar
1/2 C. chopped pecans or walnuts
1 stick melted butter
Directions
Spray a bundt pan and line the frozen rolls around it. Sprinkle the brown sugar on top of the rolls. Sprinkle the pudding mix on top of the brown sugar evenly. Put the chopped nuts on top of the brown sugar. Pour the melted butter on top of the nuts. Place a DAMP dish towel over the pan and let rise for 8-10 hours. Bake at 350 for 25-30 minutes. Invert into a deep cake dish to catch the drippings and eat warm.

The Easiest Coffee Cake Ever
Ingredients
1 box yellow butter cake mix
1 pkg. new instant vanilla pudding
1/2 C. Wesson oil
1 C. sour cream
4 eggs
mixture of cinnamon and sugar
Directions
Mix dry mixes (cake mix and vanilla pudding); add oil and cream and blend together. Add eggs one at a time. Sprinkle Bundt pan with cinnamon sugar. Add batter and sprinkle top of cake with cinnamon sugar. Bake at 350 degrees for 45-50 minutes. Let cool in pan 10 minutes. Turn out and sprinkle cake again with cinnamon sugar.

Butterscotch Coffee Cake
Ingredients
3/4 C. pecans
24 frozen yeast rolls
1/2 C. (1 stick) butter
1 small box regular (not instant) butterscotch pudding
3/4 C. firmly packed brown sugar
1 tsp. cinnamon
Directions
Grease bundt cake pan. Spread nuts on bottom. Place rolls in pan, then sprinkle with dry pudding mix. Melt butter; add sugar and cinnamon and pour over rolls. Cover with towel. Leave overnight. Do not refrigerate. Bake at 350 degrees for 30 minutes. Invert on plate. Pinch off or slice to serve.
