March, Maybe Spring??!!




Since my birthday last week, we have another birthday. Grandbaby, Olivia turned one today!! Olivia lives in NJ. (When we get pics, we will add them) I turned 29 last week! Again!!!! I don't know how long I can get away with this, since my youngest of five children will turn 30 in October. His card to me said it all : Your birthday reminds me of the famous Chinese scholar- Yung No Mo!!!! So, maybe next year, just maybe, I will reach 30........NOT!!

Taj Mahal Update!



The chicks are 2 1/2 weeks old now, and how they have grown. The chicken coop is well on it's way to being complete. The birds have to have all their feathers before they can be put out. They are about half way there now! They bunch up, sleep on each other, and also crap on each other! LOL Dirty birds! The turkeys are very sociable. They call to us, wait for us to come talk to them, love to be held, and hopefully will stay that way when older and outside!

Here are some more egg recipes.

Egg Fu Yung
Servings: 6 Preparation Time: 10 min. Cooking Time: 10 min.

Ingredients:
1 Tbs. vegetable oil
2 tsp. freshly grated ginger root
4 green onion, chopped
1 celery rib, thinly sliced
1 Lbs. cooked shrimp, chopped
6 egg, well-beaten
1 cup fresh bean sprouts, chopped
1 tsp. salt
1 tsp. black pepper
1 Tbs. vegetable oil
Cooking Directions:
Heat vegetable oil in a skillet. Add ginger root, onion, celery, and shrimp. Cook 3-5 minutes, or until translucent and crisp. Remove from heat. Add eggs, sprouts, salt, and pepper. Mix well. Heat oil in another skillet. Add a portion of the mixture from the first skillet. Cook until goden brown on both sides. Remove. Repeat until all the mixture is used.

TAJ MAHAL!! A CHICKEN'S PARADISE



As promised, here are pictures of our new chicken coop! It's partially done, but will comfortably hold our 5 turkeys and 18 chickens plus!! There will be room to store the hay and straw also. If the chickens up and leave, we will be taking aps for rooms for rent!!! :) But, as I see it, there should be NO complaints from these chicks!! This thing is huge!
Here are some more copy cat recipes!! I just love getting copy cat recipes.
--Bob's Big Boy--
1 pound ground chuck
8 jumbo sesame seed buns
1 cup shredded lettuce
4 slices real American cheesesalt
Sauce:
1/4 cup mayonnaise
2 Tablespoons sweet relish
2 Tablespoons ketchup
2 teaspoons water
In a small container, combine the mayo, relish, ketchup, and water.Set aside. This is your Big Boy sauce.Carefully form the beef into eight equal sized, round patties about4" in diameter. Do this on waxed paper. Discard the top half of fourof the eight buns. Toast the the buns until golden. The extra bottom,or "heal" is your middle bun, or "club".
After the buns are toasted, grill your freshly formed beef patties.Salt liberally. Cook for about two minutes, then turn and add anotherdash of salt. Cook for about another two minutes.While the beef is cooking, dress your Big Boy buns as follows:
Put half the sauce on the toasted bottom, and the other half on the middle, adding 1/8 cup of lettuce to each. The slice of cheese goes on top of the lettuce on the true bottom bun. When the beef is done, drain excess fat by tilting the patty to theside while holding it to the spatula with your free hand. Put onepatty on each dressed bun, stack the center (non-cheese) patty/bun on top of the bottom (cheesed) patty/bun. Finish by placing the toasted crowns on top.
--Bojangles Biscuits-
-2 cups self rising flour
2 teaspoons baking powder
2 teaspoons confectioners sugar
1/2 cup solid vegetable shortening (such as Crisco)
1-1/2 cups buttermilkMelted butter (about 1/4 cup)
Stir together the flour, baking powder & 10x sugar. Cut in the shortening until pieces are about the size of grains of rice. Stir in the buttermilk. Knead a few times, roll out on a floured board or counter top to 3/4-inch thickness. Be careful not to work dough too much or add too much flour, or you'll have dry biscuits. Cut with an oversized biscuit cutter (about 3-inches). Place on an ungreased cookie sheet and bake about 12 minutes in apreheated 450 degree oven.

Gobble Gobble!!




Ok, so we get 12 chicks, that in two months, will be laying 1 to 2 eggs a day. That is 1 to 2 dozens eggs a day!! But, like Paul says, don't count our eggs before they're layed! So then we get really adventurous, and decide to get one or two turkeys. We get to the store selling the turkey chicks and there is a minimum of 5 turkey chicks!! Ok, great!! We also went to get what might be male chicks, or not!! It's a guessing game, and we have to wait and see. So we get 6 maybe males, maybe not, and a minimum of 5 turkey chicks. The top pic is of male chicks (or not) and bottom is the turkey chicks, also a guessing game.

So Paul is still out building, what looks like the Taj Mahal of chicken coops. (Pictures soon)

No hurry, these little critters can't go outside till they have all their feathers. (maybe 4 weeks.....EEEEEKKKKK!!) Dang, for those old enough, hope we don't start looking like Ma and Pa Kettle!!!!! Chickens outside, chickens inside, chickens everywhere!!!!




Here are a few NO BAKE cookie recipes:

Peanut Butter & Jelly No Bake Thumbprint Cookies

Ingredients
2 qt. popped popcorn


1 C. light corn syrup

1 C. creamy peanut butter

3 Tbs. favorite fruit jam or jelly
Directions
Measure 2 quarts popped corn into a large bowl; set aside. In medium saucepan, over medium-high heat, bring corn syrup to a boil and boil for 3 minutes, stirring slowly; remove from heat. Stir in peanut butter. Working quickly, pour peanut butter mixture over popcorn, tossing gently to coat. Allow to cool 10 minutes. Roll popcorn mixture into 18 2-inch balls. Press thumb firmly into center of each ball. Fill each cookie center with 1/2 teaspoon jam or jelly. Store in airtight container.
Preparation Time
25 minutes




No-Bake Luscious Cookies

These are Rice Krispie treats taken to the next level, tasty, delicious and easy to do. Make it with the kids.
Ingredients
1/2 C. white sugar


1/2 C. white syrup

1 C. chunk style peanut butter

3 C. Rice Krispies
Directions
In a heavy skillet, heat the sugar, syrup, and peanut butter. Stir and heat until mixture is well blended, almost to a boil. Then stir in Rice Krispies. Stir until Krispies are well coated. Drop by teaspoonfuls on wax paper. They harden quickly. These are tasty.

Hey PEEPS!!!



Hey Peeps, Look what we got!! PEEPS!!!!!! They are soooooo coooool!!!!
SO GUESS WHAT PAUL IS DOING TODAY????? BUILDING A COOP!!!
We are going to have laying hens in about 2 months. We had decided, with the economy and such, we were going to take matters into our own hands :) Also, check back, because soon, we will be having baby rabbits also!

Now, I try to put a recipe in that kind of ties in with the season, or the pics I post, but..............fried chicken would just be too cruel, so how about egg recipes????!!! LOL (we will NOT be eating these at all, only using for laying eggs!)

CHEESE AND EGG DISH
3 slices bread cubed
3 eggs
1 1/2 c. milk
1 pkg. Monterey Jack cheese, shredded
Mustard
Fresh basil
ChivesChopped
onion
Grease square casserole. Put 2 slices (cubed) in bottom then layer of cheese. Repeat. Small amount of mustard on a few cubes of bread. Salt and fresh ground pepper and basil. Small amount chopped onion. Beat eggs and add milk. Pour over mixture. Bake at 325 degrees for 45 to 50 minutes uncovered.

SAUSAGE, EGG, CHEESE DISH
1 (8 oz.) pkg. crescent rolls (Pillsbury)
2 c. shredded Swiss cheese4 eggs, slightly beaten
1 (8 oz.) pkg. brown and serve sausages, thawed and sliced (10)
3/4 c. milk
2 tbsp. chopped green pepper
2 tbsp. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano
Separate crescent roll dough into 2 large rectangles. Place in ungreased 13 x 9 inch pan, press over bottom and up sides about 1/2 inch to form a crust. Seal perforations. Place cut up pieces of sausage over crust and sprinkle with cheese. Combine remaining ingredients and pour over cheese and sausage. Bake at 425 degree oven for 20 to 25 minutes until golden brown. Let set a few minutes before cutting. (One pound sliced mushrooms may be used in place of the sausage, or some mushrooms may be used in addition to the sausage.)

Ruby dooby dooo!!!

This crazy dog is Ruby. She's wearing Paul's glasses!! Anything for attention, I guess.

I had been looking for a good coarse mustard, and then I thought, I CAN MAKE IT!! So I searched and found this basic recipe. I will be using this with corned beef soon!!! Here is one of the better ones, I found.


Basic Coarse Mustard
Ingredients
Mustard seed, 1/3 cup
Cider vinegar, 1/3 cup
1 Clove garlic, halved, 1
Water, 3 Tbsp
Liquid honey, 3 Tbsp
1 mL Salt, 1/4 tsp
pinch Ground cinnamon, pinch

Instructions
In a small bowl, combine mustard seed, vinegar and garlic. Cover and refrigerate 36 hours. Discard garlic. Process mixture in a food processor with water until coarse consistency. Stir in honey, salt and cinnamon. Refrigerate in tightly sealed containers. Use within two weeks.
Variation, Horseradish Mustard: Add 1 Tbsp horseradish.
Variation, Peppercorn Mustard: Add 1 Tbsp green peppercorns, crushed.
Variation, Herb Mustard: Add 1/2 tsp (2 mL) or more as desired of any dried herb (tarragon, dill, thyme, basil or oregano).
Variation, Dijonnaise Mustard: Add 1/3 cup mayonnaise.
Yield: 1/4 cup

HERE IS A RECIPE FOR BAKED ZITI, ONE OF PAULY'S FAVORITES!!
Baked Ziti with Fire Roasted Tomatoes

Fire roasted tomatoes add a rich, smoky flavor to a delicious cheesy baked pasta dish.
Prep Time: 30 min
Total Time: 55 min
Makes: 6 servings

2 1/2 cups uncooked ziti pasta (8 oz)
1/2 lb extra-lean (at least 90%) ground beef
1 large sweet onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 medium zucchini, cut in half lengthwise, sliced 1/4 inch thick
1 can (15 oz) tomato sauce
1 can (14.5 oz) fire roasted diced tomatoes, drained
2 teaspoons chopped fresh oregano leaves
1/4 teaspoon coarse (kosher or sea) salt
1/4 teaspoon pepper
3/4 cup shredded mozzarella cheese (3 oz)
1. Heat oven to 375°F. Cook and drain pasta as directed on box.
2. Meanwhile, spray 12x8-inch (2-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, cook beef, onion and garlic over medium heat, stirring frequently, until beef is thoroughly cooked.
3. Stir zucchini into beef mixture; cook 2 minutes. Stir in tomato sauce, tomatoes, oregano, salt and pepper. Heat to boiling. Add drained pasta; toss to coat. Spread in baking dish.
4. Cover dish tightly with foil; bake 20 minutes. Remove foil; sprinkle with cheese. Bake uncovered about 5 minutes longer or until cheese is melted.
