Sour Dough Starter

A cool turkey with lollipop "feathers"!! And I got out my "real" turkey from the freezer and put it in the refrigerator to start thawing. Can't wait!!
I started a batch of sour dough starter yesterday. With sour dough you can make rolls, bisquits, cinnamon bread, bagels, muffins, pizza dough, and even pancakes. I am going to make rolls for Thanksgiving with my starter.

Yeast Starter:
1 pkg. active dry yeast
1/2 cup warm water
2 cups warm water
2 cups all purpose flour
1 tbs. granulated sugar or honey
Preparation:Sprinkle the yeast over the first amount of warm water and sugar, stir and let set 10 mins. Add second amount of warm water and flour, beat until smooth, cover with a cheesecloth and let set in a warm place for several days ,stirring several times per day. When ready the starter should have a sour smell with small bubbles gently rising to the surface. The whole precess will take from 5 to 10 days depending to some extent on the time of year. Place in a jar and refrigerate.
TO REPLENISH For each cup of starter used, add 3/4 cup of warm water , 3/4 cup of flour , 1 tsp. of sugar or honey and stir well. Cover loosely and allow to set at room temp. for AT LEAST one day. Refrigerate.
FEEDING: If starter is not used regularly stir in a tsp. of honey or sugar about every 10 days.

Sourdough Cinnamon Rolls
Yield: 8 servings

1 cup active sourdough starter
2 teaspoons salt
2 tablespoons shortening
2 1/2 cups unbleached flour
1/2 cup dry skim milk
3 tablespoons sugar
1/2 cup whole milk
1 1/2 teaspoons baking soda
Butter
1/4 to 1/2 cup brown sugar mixed with 1 teaspoon cinnamon
Sticky Mixture:
2 tablespoons melted butter
1 tablespoon liquid coffee
2 tablespoons brown sugar
1/2 teaspoon cinnamon
Dash of salt
Mix first seven ingredients together, working in the flour until a good dough results. Divide the dough into two parts, rolling each out into thin cakes about 1/4 inch thick.Do the following with each half: Dot with butter, then sprinkle with brown sugar-cinnamon mixture. Roll dough into 12-inch long pieces. Cut off 1 inch slices and place in prepared pan (mix Sticky Mixture ingredients and place in the bottom of a baking pan). Let dough rise about an hour and bake at 325 degrees F.Serve with sticky side up.

Thanksgiving Menu

Mitch and his clone, Alex.

These are last years Thanksgiving pictures. We'll get more for this year next week. Ok, now Grampa never smiles for pictures, but that's good, because when he's smiling, HE IS USUALLY UP TO NO GOOD!!!!! And everyone of these girls (Breann, Kalista and Julissa) love to pick on him mercilessly! And he usually, oh did I say usually? He always deserves it!!
Ok, started on my menu for Thanksgiving. These are the ones I'm going to be making for desserts:

2 Pumpkin pies
1 Pecan pie
Pecan tassies
Puppy chow
Apple slices
Chocolate Silk Pie
and tons of whipped cream!!

The main menu will be the turkey of course, which Paul makes, with sausage stuffing. Mashed potatoes with gravy, sweet potatoes, green bean casserole, Italian pasta salad, broccoli salad, nachos and cheese (kids favorite), cheese ball, spinach dip and crackers, tater casserole, meat balls in mushroom sauce, and yeast rolls. Everything home made of course. Can't wait!!!

"Night Before Christmas" Coffee Cake
1/2 cup sugar
1/4 cup butter
2 beaten eggs
1/2 cup warm milk
1 pkg yeast (2 teaspoons bulk yeast) dissolved in
3 tablespoons warm water
3 cups flour
1 teaspoon salt
1/2 teaspoon vanilla

Topping:
2/3 cup sugar
1 tablespoon cinnamon
4 tablespoons melted butter or margarine
1/2 cup nuts or maraschino cherries, candied red or green cherries

Cream together sugar and butter. Then add eggs, milk, 1 package of yeast (2 tablespoons bulk yeast) dissolved in 3 tablespoons of warm water, flour, salt and vanilla. Beat all of these ingredients together. Then set dough aside and let it rise, until double in size. When your coffee cake dough has risen to double the size (this may take about 2 hours) put it in a 9x13" greased pan and spread with topping; Combine sugar, cinnamon, melted butter and nuts (you can use maraschino cherries or candied red and green cherries if you don't like nuts) Now place in a cold oven and leave it in there overnight to rise. The next morning turn oven to 350 degrees and bake for 1/2 hour. Take out and serve warm. This makes a large coffee cake or you can put the dough in two round pans instead.

MARBLED POUND CAKE WITH CHOCOLATE GLAZE
Makes 1 loaf
POUND CAKE:
4 ounces unsalted butter, at room temperature, cut into small pieces, plus extra for greasing
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 cage-free eggs
1 cup organic buttermilk
1-1/2 teaspoons vanilla extract
1/2 cup unsweetened cocoa powder, sifted
1/2 cup semisweet chocolate chips
CHOCOLATE GLAZE:
8 ounces bittersweet chocolate, cut into small pieces
3 ounces unsalted butter, cut into small pieces
1/3 cup light corn syrup
1/3 cup brandy
Position a rack in the center of the oven. Preheat the oven to 350 degrees F. With butter, coat the bottom and sides of an 8-1/2-by-3-1/2-by-2-1/2-inch loaf pan.
For the cake, in a medium-sized mixing bowl, sift together the flour, baking soda, baking powder, and salt. Set aside.
In the large bowl of an electric mixer fitted with the paddle attachment, or in a large mixing bowl using a hand-held electric mixer, beat the butter at medium speed. Gradually add the sugar, then increase the speed to high and continue beating until fluffy. One at a time, add the eggs, beating just until each has blended in. Reduce the speed to low and beat in a third of the flour mixture; then half of the buttermilk; then another third of the flour mixture; then the remaining buttermilk and the vanilla; and, finally, the remaining flour mixture.
Scrape two thirds of the batter into the loaf pan. Add the cocoa to the batter remaining in the bowl, and beat at low speed until blended. With a rubber spatula, fold in the chocolate chips. Drop large spoonfuls of the chocolate batter over the batter in the pan; then, inserting the blade of a narrow metal spatula or a table knife vertically into the pan, swirl through the batters to combine them partially for a marbled effect.
Bake the pound cake until a long wooden toothpick inserted into the center comes out clean, about 1 hour. Transfer to a wire rack to cool.
When the cake has cooled completely, run a sharp knife around the inside of the pan to separate the cake. Invert the pan onto the rack and lift it away to unmold the cake. Turn the cake right side up. Place a pan below the rack to capture glaze drips.
To make the glaze, bring 2 inches of water to a simmer in a medium saucepan. In a medium heatproof bowl large enough to rest on the pan's rim without touching the water, combine the chocolate and butter. Set the bowl over the simmering water and leave until the chocolate and butter have melted almost completely; then, turn off the heat and let the mixture continue melting, stirring occasionally. With a wire whisk, stir in the corn syrup and brandy. Carefully pour the mixture through a fine-meshed strainer into a clean liquid measuring cup.
Drizzle the warm glaze evenly over the cake. Leave until the glaze has set.
Slip a long, sturdy spatula under the cake and transfer to a flat serving platter or cutting board. To serve, cut crosswise with a sharp serrated knife.

The Paint Pallette of Nature

We have such beautiful fall colors here in Indiana!! The colors range from orange to yellow to bright red!!! I am tempted to get out my oil paints and try my hand at copying these colors on canvas! The corn fields and the woods protect and feed our deer. God's hand in nature is so evident!! But, along with these beautiful colors, comes raking them up too!! Always great fun! Yeah right!!!

Here are some more Christmas cookie recipes:

Almond Crescent Shortbread

1 1/2 to 2 cups flour
1/2 teaspoon salt
ground almonds (approx.1/4 cup)
Extra sugar (about 1/3 cup)

Put all ingredients into a bowl. Mix together with a mixer. Take by the teaspoon and shape into crescent shapes and place on an ungreased cookie sheet. Bake at 275 degrees for 15-20 minutes. They should not be brown. Roll in the extra sugar while still warm.

1 cup cooking oil
2 eggs
4 1/2 cups flour
1 teaspoon baking powder

Fur Baby Business!!

We all love our fur babies, but one of us started a business for our fur babies!!!
As I'd mentioned before, our family has started some small businesses. One is Du Claw Pet Sitters.
Nephew, Sean Greenwood has started a dog walking business. His wife Kerry, new baby girl, and Sean are located in New Jersey, in Monmouth County.
They are Monmouth County's Premiere Dog Walkers & Pet Sitters
Du Claw was founded by Sean Greenwood. As a former member of the New York Stock Exchange, Sean knows how hard daily commuting can be on our pets. Long days, traffic, and delayed boats and trains often interfere with our pets' needs. When Sean left the NYSE he decided to devote his time helping other busy pet owners, and Du Claw was born.Sean is the "face" of Du Claw. He will be the one meeting you for initial "meet and greets" and is our team's "Top Dog". Check out his site!!!!
Ok, here are some more Christmas recipes:
Martha Washington Mounds
1 stick oleo, room temperature
2 (1 pound) boxes powdered sugar
1 can Eagle brand milk
2 cups chopped nuts (optional)
1 cup flaked coconut
2 teaspoons vanilla
1 small package (3 ounces) cream cheese
Mix ingredients in large bowl until well blended. Put in refrigerator for about 1 hour. Then roll a teaspoon at a time into little balls (the size of a walnut). Place on waxed paper on a cookie sheet or flat pan. Put a tooth pick in each ball & keep refrigerated until ready to dip in chocolate. I found that freezing works better.
CHOCOLATE DIP: Melt 1/2 small cake paraffin in double boiler. Add 1 large package chocolate chips. Blend until smooth and keep over hot water while dipping. Place dipped chocolate back on waxed paper. After finished put a small amount on top of chocolate to cover toothpick hole.
Mom's Mints

24 oz. Mint Chocolate chips
6 oz. semi-sweet Chocolate chips
1 1/4 cups powdered sugar (well packed)
1 cup butter
2 eggs
Melt chocolate chips together and set aside to cook until lukewarm. When cool, add powdered sugar. Beat in the butter and eggs, one egg at a time. Cream well with an electric mixer. Butter the bottom of a jelly roll pan. Pour the mixture in and spread. Refrigerate. When completely cooled, cut into squares.
