This crazy dog is Ruby. She's wearing Paul's glasses!! Anything for attention, I guess.I had been looking for a good coarse mustard, and then I thought, I CAN MAKE IT!! So I searched and found this basic recipe. I will be using this with corned beef soon!!! Here is one of the better ones, I found.
Basic Coarse Mustard
Ingredients
Mustard seed, 1/3 cup
Cider vinegar, 1/3 cup
1 Clove garlic, halved, 1
Water, 3 Tbsp
Liquid honey, 3 Tbsp
1 mL Salt, 1/4 tsp
pinch Ground cinnamon, pinch
Instructions
In a small bowl, combine mustard seed, vinegar and garlic. Cover and refrigerate 36 hours. Discard garlic. Process mixture in a food processor with water until coarse consistency. Stir in honey, salt and cinnamon. Refrigerate in tightly sealed containers. Use within two weeks.
Variation, Horseradish Mustard: Add 1 Tbsp horseradish.
Variation, Peppercorn Mustard: Add 1 Tbsp green peppercorns, crushed.
Variation, Herb Mustard: Add 1/2 tsp (2 mL) or more as desired of any dried herb (tarragon, dill, thyme, basil or oregano).
Variation, Dijonnaise Mustard: Add 1/3 cup mayonnaise.
Yield: 1/4 cup
